Nectarines have deliciously sweet and juicy flavour, when ripe they are soft. When unripe, nectarine flesh is quite hard and crunchy, and they are not as sweet but instead slightly tart. Nectarine’s differ slightly from peaches in that their skin is smooth and fuzz free. They are beautifully aromatic stone-fruit with shades of deep yellow flesh, and orange and red skin. Yellow nectarines contain more acid than white nectarines, that tartness softens as the fruit ripens. White nectarines are lower in acid and taste sweeter regardless of ripeness.
